Chicken biryani brings together tender, yogurt-marinated chicken and fragrant basmati rice in a covered pot. Browned onion, whole spices, fresh herbs, and saffron milk build layers of flavor, while the rice finishes cooking over the chicken.

The key is to prepare the rice and chicken to different stages before layering them. That way, the rice can absorb the chicken’s savory broth without losing its shape.

Build flavor into the chicken and onions

Plain whole-milk yogurt coats the chicken thighs and carries the lemon juice, ginger, garlic, and ground spices across each piece. Cumin, coriander, garam masala, turmeric, and chili powder give the marinade its warm, savory character. Cover the chicken and refrigerate it for the time listed on the recipe card so the flavors have time to come together.

Thinly sliced yellow onion needs to cook until deeply golden. Stir it occasionally as it softens and browns, and set aside about half for the top layer. The rest stays in the pot, where cumin seeds, bay leaves, cardamom pods, cloves, and a cinnamon stick toast in the oil. Keep the spices moving so they become fragrant without scorching.

Parboil the basmati rice with care

Rinsing basmati rice until the water runs mostly clear removes loose surface starch. Soaking it in cool water helps the grains cook more evenly. Drain the rice before adding it to boiling salted water, and watch for the texture cue on the recipe card: the edges should be tender, while the center remains firm.

That firm center is important because the rice cooks again in the covered pot. If you boil it until fully tender at this stage, it can become soft as it absorbs broth and steam. Drain it well so excess water does not dilute the liquid around the chicken.

Layer the rice over the chicken

Spread the marinated chicken in an even layer over the toasted spices and browned onion, then turn the pieces as directed on the recipe card. Stir in the chicken broth and let the chicken simmer while the saffron threads steep in warm milk. The milk carries saffron’s color and aroma through the rice.

Scatter cilantro and mint over the chicken before adding the drained rice in an even layer. Drizzle on the saffron milk and finish with the reserved onion. Cover the pot tightly and cook over low heat for the time listed on the recipe card. A tight cover helps the rice steam while the chicken and broth finish cooking together.

Rest the pot before fluffing

Once the cooking is finished, turn off the heat and leave the pot covered for its listed resting time. This pause lets the rice settle and gives the steam a chance to distribute through the layers. Keep the lid on during the rest so that steam stays inside.

When you uncover the pot, gently fluff the rice and chicken together. Use a light touch to separate the grains while bringing up pieces of chicken, herbs, and browned onion. Stirring too vigorously can break the rice and blur the distinct layers that make biryani special.

Frequently Asked Questions

Why should the rice still be firm in the center?

The basmati rice cooks a second time over the chicken, where it absorbs broth and steams under the covered pot. Starting with a firm center helps the grains finish tender without becoming overly soft.

What does the yogurt do in the chicken marinade?

Plain whole-milk yogurt coats the chicken and combines with lemon juice, ginger, garlic, and the ground spices. Refrigerating the covered chicken for the time on the recipe card gives those flavors time to come together.

When should I add the saffron milk?

Stir the saffron threads into warm milk while the chicken simmers. After you layer the drained rice over the chicken and scatter on the herbs, drizzle the saffron milk over the rice before covering the pot.

This chicken biryani layers yogurt-marinated chicken with basmati rice, browned onions, herbs, and saffron milk. The rice and chicken finish cooking together in a covered pot.

Ingredients

  • Chicken marinade
  • 1 1/2 lb boneless, skinless chicken thighs, cut into 1 1/2-inch pieces

  • 1/2 cup plain whole-milk yogurt

  • 1 tbsp lemon juice

  • 1 tbsp grated fresh ginger

  • 2 garlic cloves, minced

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp garam masala

  • 1/2 tsp ground turmeric

  • 1/2 tsp chili powder

  • 1 tsp kosher salt

  • Rice and biryani
  • 2 cups basmati rice

  • 8 cups water

  • 2 tsp kosher salt

  • 3 tbsp olive oil

  • 1 large yellow onion, thinly sliced

  • 1 tsp cumin seeds

  • 2 bay leaves

  • 4 green cardamom pods

  • 4 whole cloves

  • 1 cinnamon stick

  • 1/2 cup chicken broth

  • 1/4 cup chopped fresh cilantro

  • 2 tbsp chopped fresh mint

  • 1 pinch saffron threads

  • 2 tbsp warm milk

Directions

  • Mix the chicken with the yogurt, lemon juice, ginger, garlic, ground cumin, coriander, garam masala, turmeric, chili powder, and salt. Cover and refrigerate for 20 minutes. Meanwhile, rinse the rice until the water runs mostly clear, then soak it in cool water for 20 minutes and drain.
  • Bring 8 cups water and 2 tsp kosher salt to a boil in a large pot, about 10 minutes. Add the drained rice and boil for 6 minutes, until the grains are tender at the edges but still firm in the center. Drain well.
  • Heat the olive oil in a large, heavy pot or Dutch oven over medium heat. Add the onion and cook for 8 minutes, stirring occasionally, until deeply golden. Transfer about half the onion to a plate for topping.
  • Add the cumin seeds, bay leaves, cardamom, cloves, and cinnamon stick to the pot and toast for 1 minute. Add the chicken and its marinade, spread it into an even layer, and cook for 6 minutes, turning the pieces once.
  • Stir in the chicken broth, cover, and simmer over medium-low heat for 8 minutes. Stir the saffron into the warm milk while the chicken simmers.
  • Scatter the cilantro and mint over the chicken. Spoon the drained rice evenly on top, drizzle with the saffron milk, and add the reserved onion. Cover tightly and cook over low heat for 12 minutes.
  • Turn off the heat and let the covered pot rest for 10 minutes. Gently fluff the rice and chicken together before serving.

Notes

  • The rice should still have a firm center after parboiling; it finishes cooking over the chicken in the covered pot.
